Pig Pickin' Cake

- 1 (15 1/4 ounce) box yellow cake mix (follow the directions on the cake mix box to make cake batter)
- 11 ounces mandarin oranges, drained
- 3 1⁄2 ounces vanilla instant pudding mix
- 1 (12 ounce) container Cool Whip
directions
- Prepare cake batter according to directions on the box.
- Beat in the drained oranges until blended.
- Pour into greased and floured sheet cake pan or two prepared 9-inch round baking pans.
- Bake at 350 degrees for 22 to 25 minutes or until a toothpick inserted neat the center comes out clean. Cool for 10 minutes and then transfer from the round pans to wire racks until completely cool. For Sheet cake make sure cake is Completely Cooled before continuing.
- For Topping: In a bowl, conbine the drained pineapple and dry vanilla pudding mix.
- Fold in the Cool Whip.
- Spread frosting on top of the Cake in the Sheet Cake Pan.
- For the Round cake : Spread some of the frosting on top of one layer, Put other layer of cake on top. Spread the remaining frosting on the top and sides of the cake.
- Garnish with mandarin oranges or pineapple chunks if desired.

I tried to add Crushed Pineapple to recipe ingredients… but although I can find my recipe, I could not get the correction to go through. A 16 to 18 ounce can of crushed pineapple. I used the round cut pineapple, because I could not find crushed at my grocery & crushed them.Someone suggested a small can of Crushed Pineapple. It would be a matter of taste. I have used the small snack cups for the Mandarin Oranges and the Pineapple Tibets using juice from both in the topping.
