Peanut Butter Silk Pie

- 8 ounces cream cheese, softened
- 1 cup sugar
- 1 cup creamy peanut butter
- 1 tablespoon melted butter
- 1 cup heavy cream, beaten until stiff
- 1 (9 inch) chocolate cookie pie crust
- 1 cup semi-sweet chocolate chips
- 3 tablespoons brewed coffee
- chopped peanuts, for garnish
directions
- .Beat cream cheese, sugar, peanut butter, butter, and vanilla in large mixer bowl until creamy.
- Gently fold in half the beaten cream, then fold in remaining cream until blended.
- Spread filling in crust and smooth top.
- For topping, combine the chocolate chips and coffee in a microwave-proof bowl.
- Cover with plastic wrap and microwave on high for 1 1/2 to 2 minutes (depending on your individual microwave).
- Stir until smooth.
- Cool chocolate slightly and pour over filling.
- Refrigerate pie 1 hour until chocolate is firm, then cover loosely and refrigerate overnight.
- Sprinkle with chopped peanuts, if desired.

The peanut butter filling is addictive, i can't ever get enough of it. The first time i made this, i thought i'd skip a step and just add instant coffee granules to the chocolate. yeeaah. don't do that. It made the chocolate seize up. So, now, i just leave the coffee out. Also, don't use Natural peanut butter, it wont work as well as creamy.

I have made this recipe many times. When I make it I add 1 tsp vanilla extract to the filling. Other than that, my recipe is exactly the same. It is always a favorite with everyone when I serve it! As a matter of fact, I have made it for several pot luck type of get togethers with our family, and I always have to make an additional one for my Dad to take home for himself!
