Parmesan Cornflaked Fish

Super easy, delicious.. Not sure where this one came from...I sometime use corn chip or regular chips instead of corn flakes...Also I like to mix up the spices...From my Kitchen to yours..Enjoy ** please note that this can be easily adapted to be gluten-free if you replace the corn flakes with gluten free variety or corn chip like I do and you find gluten free Parmesan***

- 1⁄3 cup corn flakes
- 1⁄3 cup grated parmesan cheese
- 1⁄2 teaspoon basil or 1/4 teaspoon , dry
- 1⁄4 teaspoon paprika
- 1⁄4 teaspoon white pepper
- 1⁄4 teaspoon salt
- 2 tablespoons fresh parsley or 1 tablespoon , dry
- 1 tablespoon butter
- 1 tablespoon lemon juice
- 1 lb firm fish fillet
directions
- 1) Preheat oven to 450.
- 2) Put the cornflakes in a sandwich-size, plastic bag. With a rolling pin, crush the flakes or use a food processor, a few pulses should do the trick. Put the crushed flakes into a small bowl.
- 3) With a fork, stir in the Parmesan cheese, basil, paprika, pepper, salt, and parsley.
- 4) Melt the butter in a small pan. Stir the lemon juice into the melted butter.
- 5) Pour the butter mixture over the crumbs in the bowl. Blend well with a fork until the crumbs are evenly moistened.
- 6) Place the fish in a single layer in a greased shallow baking dish. Pat the crumbs onto the top of the fish.
- 7) Bake for 10 minutes or until the fish flakes easily with a fork.
