ingredients
- 1 cup flour
- 1 teaspoon cinnamon
- 1⁄4 teaspoon salt
- 1 teaspoon baking powder
- 1 cup oats, quick cooking
- 1⁄2 teaspoon baking soda
- 1 cup buttermilk
- 1 egg
- 1⁄4 cup brown sugar
- 1⁄4 cup white sugar
- 1⁄2 cup vegetable oil
- 3⁄4 cup raisins
directions
- Using food processor steel blade: Process flour, cinnamon, salt, baking powder and baking soda until blended, about 5 seconds. Transfer to a large mixing bowl.
- Place rolled oats and buttermilk in processor and let stand for 2 to 3 minutes.
- Add egg, sugars and oil; process for 10 seconds. Add to flour mixture along with raisins. Stir with a wooden spoon just enough to moisten.
- Spoon into paper-lined muffin tins. Bake in preheated 400 degree oven for 18 to 20 minutes, until golden.
