Mushroom Pesto Green Salad

"got a bit more kick then i was expecting, not sure where that came from. tasty though, a nice change."

• Ingredients: 9
• Yields: 1 starter or side salad
• Serves: 1

ingredients

• 1 1⁄2 cups mixed greens
• 1⁄4 cup cheddar cheese, grated
• 2 sun-dried tomatoes
• 2 tablespoons herbed croutons
• 3 fresh mushrooms, sliced
• 1⁄2 teaspoon Dijon mustard
• 1⁄2 tablespoon light mayonnaise
• 1⁄2 tablespoon pesto sauce
• 1⁄2 - 1 teaspoon water

directions

1. layer all but last 3 ingredients in a bowl.
2. mix mustard, mayo, and pesto. add water if needed to thin and drizzle on top.
3. toss lightly.
