- 2 dozen pacific oysters, on the half shell
- 1 bird's eye chili, fresh
- 2 tablespoons coriander, finely chopped
- 1 1⁄2 limes, juice of
- 1 1⁄2 garlic cloves, crushed
- 1⁄4 teaspoon sea salt
- 1⁄4 cup extra virgin olive oil
- 2 tablespoons red caviar
- lime wedge, to serve
directions
- Cut the chilli in half and discard the seeds, chop the chilli flesh and combine in a small bowl with the coriander. Add the lime juice, garlic, salt and olive oil and mix well together. Spoon onto each of the oysters with a little caviar.
- Serve with the lime wedges.
