MJ's Migraine Muffins

"These are about the best muffins I have ever tasted. They got their peculiar name when one evening I was down with a migraine and my neighbor baked and brought them over for the family to enjoy. When I recovered in the wee hours of the morning after not eating for close to 48 hours, seeing these on the kitchen counter I ate one...well all I can tell you was that they were pure heaven. After eating these delightful morsels I asked MJ for the recipe, but she continued to forget to give it to me until one morning many months later she finally e-mailed it to me and on that very day I had another migraine. Go figure, they're a nice cure anyway!"

  • PREHEAT oven to 400 degrees F.
  • MIX dry ingredients together.
  • COMBINE banana, egg, buttermilk and oil.
  • ADD banana mixture to dry ingredients, stirring as little as possible, fold in chocolate chips.
  • BAKE in greased muffin pan for 15 minutes.

  1. I had a raging migraine the day I decided to prepare these very easy to prepare muffins. They were very quick to mix up and turned out lovely and very delicious. I loved the combination of banana, oats and chocolate chips. I don't know that they healed my migraine, but they made my tummy surre feel good. They were so tasty, I ate 3 in one sitting.
     
  2. Really nice. However, next time I would put in less chocolate chips. Felt there were a bit too many for my taste.

Yes, I have a techy background that spills into our business which is unique in that we handle all the details from start to finish. Business interests take us deep into the internet...a story on it's own! I collect chefs (yea,you read right), cookbooks and dishes. The dishes / table settings are in every color and style imaginable. I love to set theme tables that emphasizes the food (that’s the artist in me). I have an insatiable interest in cooking techniques and ingredients, especially the exotic. Our home is blessed with an array of cats, a dog, hamsters, exotic birds and tropical fish. There’s a whole lot of God, love and laughter being served along with the food here! I adore this site and I tip my hat to all the staff and ‘zaar contributors.
