ingredients
- 2 slices cooked ham
- 1 flour tortilla
- 1 tablespoon butter
- 1 egg, beaten
- 2 tablespoons shredded cheddar cheese
- 1 tablespoon chopped onion
- chili powder, to taste
directions
- Overlap ham on tortilla. Melt butter in a small skillet. Place tortilla with meat in skillet; top with egg, cheese, and onion. Cover skillet with lid and cook over medium low heat 5 minutes or until egg is set. Sprinkle with chili powder and fold in half to eat.

YUM-O! This IS a great after school snack, even for teachers like me. :) I used a (burrito size) Jalapeno-Cheddar tortilla, leftover scrambled eggs, 4 slices of deli-style ham and a little more cheese than called for.
