Lemon Garlic Dressing
- 1⁄4 cup lemon juice, fresh
- 1 tablespoon lemon zest, grated
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic, minced
- 1 tablespoon Greek oregano
- 3⁄4 cup olive oil
- salt and pepper

For the Salad
- 1 lb mediterranean sausage
- 2 cups orzo, cooked
- 1⁄3 cup pine nuts, toasted
- 6 green onions, thinly sliced
- 1⁄4 lb feta cheese
- 10 kalamata olives, pitted and coarsely chopped
- 1 bunch spinach, fresh, chopped
directions
- Whisk together the dressing ingredients and check if it needs salt and pepper.
- In a large skillet, fry the sausage over medium heat for 4-5 minutes, breaking it up as it cooks.
- In a large bowl, toss the cooked sausage with the remaining ingredients except the spinach. Toss with the dressing; taste for salt and pepper.
- Add the spinach and toss again.
