Marinated Grilled Chicken With Watermelon Salsa

ingredients
- 1 tablespoon fresh oregano, chopped or 1 teaspoon dried oregano leaves
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 3⁄4 teaspoon ground cumin
- 1⁄2 teaspoon salt
- 3 garlic cloves, minced
- 4 boneless skinless chicken breasts or 8 boneless skinless chicken thighs

For salsa
- 2 cups watermelon, in 1/2 inch dice
- 1 cup mango, in 1/2 inch dice (or canned peaches)
- 1⁄4 cup red onion, finely chopped
- 2 tablespoons cilantro, finely chopped
- 2 tablespoons jalapeno peppers, seeded and finely chopped
- 1 tablespoon lime juice
- 1⁄2 teaspoon sugar
- 1⁄4 teaspoon salt
directions
- Combine first 6 ingredients in a zipper bag and mix.
- Add chicken, seal, and smoosh around to coat.
- Refrigerate 4 hours, turning occasionally.
- Combine salsa ingredients and stir.
- Plate chicken on pre-heated grill coated with cooking spray.
- Grill 5 minutes on each side, less for thighs, or until cooked through.
- Serve with salsa.

We made this with naked Quorn cutlets for the vegetarians and chicken breasts for the meat eaters. DD tried a piece of hers before I got the salsa on the table and liked it so much she decided she was going to eat it just like that! Everyone really enjoyed this, which is really rare in our house because we all have very different likes and dislikes when it comes to food. We had a lot of salsa left over so next time I will make about half as much, or double the meat, it was that good!!

I was born in a small Canadian prairie town but was raised in the city. Country living appeals to me more and more and now I think I have the best of both worlds, living just outside the city but within a 30 minute drive from downtown.
I enjoy the wildlife I see out my kitchen window and my vegetable and flower gardens in the summer. And I love cooking with the produce from my garden, although there always seems to be too much at once. Learning to can became a necessity with all those beautiful vegetables and I now really enjoy making pickles, relish, salsa, jams and whatever else strikes my fancy.
I have 2 teenage sons and cooking to suit everyone's taste is always a challenge. Recipezaar has certainly made life easier in that regard, with so many great recipes to choose from.
