Mango and Cream Cake With Brandy

    white cake mix (or just make homemade)
  • 2
    cups mangoes, sliced with juice
  • 14
    cup brandy (peach nice)
  • 14
    cup mango, preserved (jam...pineapple would also be good)
  • 1
    cup whipping cream

DIRECTIONS

  • Make cake. Cook in 1 layer pan.
  • Mix brandy and mango juice. While cake is still warm, prick the top in 1/2 inch intervals. Slowly spoon brandy mix over the cake.
  • Carefully spread preserves on top of the cake.
  • Arrange mango slices on top of that.
  • Whip cream.
  • Serve with a dollop of whipped cream on top.
  • Store in fridge.
