- 10 large potatoes, peeled and cubed
- 1⁄2 cup butter
- 1⁄2 cup all-purpose flour
- 8 cups milk
- 8 ounces sour cream
- 1⁄2 cup shredded cheddar cheese
- 1⁄4 cup chopped onion
- salt and pepper
directions
- Place potatoes and onion in water until covered and boil until potatoes are tender. Drain and set aside. Melt butter in Large pot over medium heat. Whisk in flour until smooth, then gradually stir in milk. Bring to a boil, and simmer for about 5 minutes until slightly thickened. Add potatoes and onions that you set aside. Stir in sour cream and cheddar cheese. Season with salt and pepper. Once your cheese and sour cream has melted remove from heat and serve.

This very satisfying soup is so easy to prepare & well worth the small effort that's involved! The recipe, as written, makes a large amount of soup, so I only made about 1/4 of what was called for! However, it is good enough to serve to company, so when the time presents itself, I'll be making this recipe again! Thanks for sharing!
