  • Melt the butter over medium-high heat. Add Garlic and shallots an cook till translucent Add the flour and cook, stirring constantly, until smooth, about 30 seconds.
  • Add the milk and whisk constantly until the mixture thickens, about 1 minute. Reduce temp to low simmer
  • Add the spinach and cook on low simmer until warmed through. Stir the spinach into the milk mixture. Cover occasionally to wilt spinach. Before serving add cheese and mix till melted. serve.
