What a great idea! I scaled it down quite a bit, as it was only for me. I added paprika aswell as cumin with the salsa & i was very happy with the results. You're sitting on a winner Grace! UPDATE: enjoyed this recipe a few times now :) I had my heart set on making it for dinner the other night, but realized, too late, that we didn't have any salsa. No matter....Chef #1646's Recipe #1078 to the rescue!!

I am loving this recipe! We had this for dinner tonight and DH asked if I could make this once a week, that's a sure sign that he loves it! I used a medium salsa and a few extra sprinkles of cumin, b/c we love cumin and topped with ff sour cream. Perfect amount of spice for us, next time I may add some shredded chicken to the bean mix. Thanks for a great recipe grace!
