  • Place drained spinach in non-stick skillet and heat well.
  • Add garlic and egg and stir until egg is set.
  • Add Parmesan cheese, cover and remove from heat.
  • Let sit for a couple of minutes for the cheese to melt.
  • Stir and serve.

    YUM! We enjoyed this very much and will be making it again. So easy and quick to put together with lovely flaour. I used fresh spinach and shredded parmesan cheese, the egg was a neat idea, I did use about double the garlic. Thanks for posting.

    I made this with fresh spinach and just sauteed it for a few minutes then added the other stuff. This was a nice change for us!

    This was good, not great to me. Although I think I may have enjoyed it more if I'd had fresh Parm. I subbed the canned Parmesan along with a small handful of mozzarella. Thanks for posting!

    Outstanding!!! I am always on the lookout for new ways to prepare spinach and this is a winner. Used 1/2 bunch fresh spinach, including stems and increased the garlic to 2 cloves as I love garlic but my youngest found it too garlicky so the original is probably a better all-round quantity. Thanks.
