  • Heat 2 tsp oil in large skillet over medium-high heat.
  • Coat tips with flour, shaking off excess.
  • Cook until browned on both sides and remove from heat.
  • In a large pot, add 1 tsp oil, mushrooms, and onion; cook stirring constantly until onion is tender (about 3 min).
  • Add meat to pot, stir in garlic, tomato paste, beef broth, sugar, beer, carrots, and potatoes-cover and simmer over low heat for about 1 hr or until thickened.
  • Season to taste with salt in pepper.

I am a Colorado ski bum at heart, but am currently stuck in Miami, FL of all places working on my Doctoral degree in physical therapy at UM. I can't wait until I graduate and can get back to the mountains! 2 more years, 2 more years...I love to cook and find it a great way to relax and slow down after classes and I can't wait until I have more free time to be able to do it.
