- 1 (18 1/4 ounce) package yellow cake mix
- 3 eggs (or as called for by your cake mix)
- 1⁄3 cup oil (or as called for by your cake mix)
- 1 1⁄3 cups water (or as called for by your cake mix)
- 1 1⁄4 cups cold milk
- 1 (3 1/2 ounce) package instant vanilla pudding
- 1 (20 ounce) can crushed pineapple, drained
- 16 ounces whipping cream (standard size)
- 1 (3 ounce) package cream cheese, softened
- 1⁄4 cup sugar
- 1⁄2 teaspoon vanilla extract
- 1⁄2 cup flaked coconut, toasted
directions
- Prepare and bake the cake according to package directions, using a greased 13 in x 9 in x 2 in baking pan.
- Cool.
- In a bowl, whisk together milk and pudding mix; let stand to thicken.
- Stir in pineapple.
- Spread over cake.
- In a mixing bowl, beat cream cheese, sugar and vanilla until smooth.
- Beat in 1 cup whipped topping.
- Fold in remaining topping.
- Spread over Pudding.
- Sprinkle with coconut.
- Cover and refrigerate for 3 hours or overnight.

This is in the Taste of Home magazines and I have a variation of it several times with great results. Very refreshing. What I do is mix the pudding and milk to made pudding mixture, add pineapple, put on cake and then put whipped topping on top of it thereby omitting the extra caleries of cream cheese and sugar!

Very disappointed with this cake. With the reviews that it had I thought that it would be outstanding, but it just tasted like yellow cake with pineapples and frosting. Also, I had problems with the recipe, because it was not consistent with the ingredient. In the list of ingredients it calls for whipping cream, then in the steps it says whipped topping. There is a big difference between whipping cream and whipped topping, and I was left to guess which one. Also, it says to beat in 1 cup of "topping" and then to fold in remaining topping, but the ingredients only called for 1 cup in the first place. I probably won't make it again, even if the recipe gets figured out. I can think of some better ways to use those really good ingredients.

<p>I live in Arizona. Cooking is a relaxing hobby and I love finding healthy meals that have a lot of flavor and heart to them. Recipezaar has not let me down. I could not possibly pick a favorite cookbook. I love searching used bookstores for old cookbooks. I collect other cookbooks that look intresting or have healthy dishes. My collection is modest, but I love it. Also, I love the Taste of Home magazines. They have real food that real people cook. I would have to say my pet peeves are people who drive while talking on cell phones and people who cannot spell potato. It is p o t a t o not p o t a t o e. There is no e unless you are spelling the plural form of potato which is potatoes. I frequently see that word mispelled in recipes and it makes me think the recipe is somehow devalued because of the spellings. The Zaar system of ratings works for me. I do try to explain myself in my reviews and welcome any questions or comments on what I have said. It is not my intention to be mean-spirited if I did not like something (it is rare for me not to like a recipe though):) Recipezaar brings such a nice element to my life and I feel it has been enriched by the wealth of knowledge both in everyone's contributed recipes and on the forums. Also, it is such a nice feature that you can log on practically any time to get help with a recipe or ingredient that might otherwise be imtimidating to prepare by yourself.</p>
