Grilled Vegetable Tomato Salad

"I threw this together for a dinner gathering using leftover grilled zucchini from the night before. It got wonderful reviews from the guests! Based on my Great-Grandfather Scavo's Calabrian Tomato salad...passed down a few generations!"

• Serves: 6

ingredients

• 3 large tomatoes, diced into bite size pieces
• 1 zucchini, sliced, grilled and diced
• 1⁄4 cup basil, fresh and finely chopped
• 2 tablespoons garlic, minced
• 1 teaspoon salt
• 1 teaspoon garlic salt
• 3 tablespoons red wine vinegar
• 4 tablespoons extra virgin olive oil

directions

1. Place first 6 ingredients in a glass bowl and mix together.
2. Let sit for 1/2 hour and add olive oil.
3. Let stand at room temperature until ready to serve -- the longer it sits the better.
