  • In a small bowl, whisk the eggs, Parmesan cheese, mayonnaise, chives and basil.
  • In a large skillet heat butter over medium heat.
  • Add egg mixture; cook and stir until completely set.
  • If desired, sprinkle with parsley and serve hot.

  2. I second the comment about not being scared of the mayo! It really does produce a creamy dish, without that dryness that can ruin a good scrambled egg.
