Fried Fresh Corn and Onion

ingredients
- 4 large ears of corn (husks and silks removed)
- 3 tablespoons butter (no subs!)
- 2 -4 teaspoons sugar
- 1 pinch cayenne pepper (optional)
- 1 medium vidalia onion, finely chopped (not minced)
- 1⁄2 teaspoon salt (or to taste)
- fresh ground black pepper (to taste)
directions
- Using a sharp knife remove the corn kernels from the cob (I use my electric knife).
- Melt the butter in a large skillet over medium heat.
- Add in the corn, sugar and cayenne pepper; stir cooking for about 10 minutes.
- Add in chopped onions and continue to cook until crispy.
- Season with salt and ground lots black pepper.

This was a hit in my house. The kids weren't bowled over by it, but my husband and I loved it. Normally I have to ask how he likes it when I make something new, but he still had a mouthful of his 1st bite when he said "wow, this stuff is pretty good!" I did omit the sugar as I am trying to cut that out of my diet and I figured both the sweetness of the corn and the vidalia's would be enough. Also I subbed cumin for the cayenne and upped the amount to 2 tsp's. Thanks KittenCal for a wonderful recipe!
