DIRECTIONS

  • Spread whole pecans on cookie sheet.
  • In a HEAVY saucepan, slowly melt butter over low heat.
  • Slowly add sugar, corn syrup, and water.
  • Cook until candy thermometer reads 300F, about 1 hour.
  • Stir constantly to avoid burning the candy.
  • Pour candy over pecans on cookie sheet.
  • In a double boiler, melt half of the dipping chocolate.
  • Sprinkle with half the chopped pecans.
  • When chocolate is set, turn and repeat.
  • When fully set, break into pieces.
