Eggnog French Toast

- 4 large eggs, lightly beaten
- 2 tablespoons sugar
- 1⁄4 teaspoon ground nutmeg
- 1 cup eggnog
- 1⁄2 teaspoon rum extract
- 1 loaf French bread, cut into 1-inch slices
- 2⁄3 cup butter, melted
directions
- Combine eggs, sugar, nutmeg, eggnog, and rum extract, and stir well.
- Place bread slices into a lightly greased 9 x 13" pan in one layer.
- Drizzle egg mixture over each bread slice. There will be excess that will flow down to the bottom of the pan - it will be soaked up by the bread while in the refrigerator.
- Cover the pan and refrigerate. Turn once during an 8 hour or overnight period.
- When ready to bake, preheat oven to 400°F.
- Carefully pour the melted butter into a 15" jelly roll pan.
- Move the french toast into the newly prepared pan, still in a single layer.
- Bake 15-20 minutes, until golden.
- Serve with your favorite toppings - some ideas include syrup, extra eggnog, powdered sugar, nutmeg, or cranberries and cranberry sauce.

What I loved about this recipe the most was the distinct taste of the eggnog coming thru nicely. A lovely way to use up eggnog in a different way than the norm. I'll remember this one for next year when I again buy eggnog and then it pretty much runs it's course here with the MEN and then I"m left with what to do...what to do. I chose not to use french bread, but instead used cinnamon bread that I had on hand. I think it would be a good idea to remember to spray your pan that you're doing the final baking in. My bread stuck to my pyrex baking dish. It did come clean with little effort though and so not a real biggie. I made this the night b/f as directed and mine took about 25 minutes of baking on 400 degrees the following morning. Thanks Starry! Made for NewKids on the Block~
