ingredients

  • 2 (14 ounce) cans creamed corn
  • 2 eggs, beaten
  • 34 cup milk
  • 1 teaspoon salt (or less)
  • 12 teaspoon pepper
  • 34 cup soda cracker, crumpled
  • 3 tablespoons butter or 3 tablespoons margarine, melted

directions

  • Mix the corn, eggs, milk, salt& pepper in a casserole dish.
  • Mix in half of the soda cracker crumbs.
  • Mix the remaining crumbs with the butter and sprinkle on top of the corn.
  • Bake uncovered in 325F oven for about 1 hour.

    I grew up in a very strong german culture and we made this but we added oysters and there liquor. 1 to 2 small cans it depends how well you like them. Before you all say ewww give this a shot. It is really good if you like Oysters. This pretty good too.

    I am born and raised a Norwegian North Dakotan. Scalloped corn is a staple at our table. It may have not been acknowledged but it is a ND dish. It is also popular in many parts of the country under different names. I believe a better known name in other areas is corn pudding.

    ND's dish mentions SD and isn't very common in ND, yet this is made everywhere in ND!
