Easy Potato Bake

  • Slice potatoes into 3/4 inch pieces. Slice onion thinly and split into rings.
  • Combine potatoes and onions and microwave on high for 10 minutes, stirring once during cooking.
  • Remove from microwave, stir through sour cream , ham, and 1/4 cup cheese.
  • Place in greased baking dish and sprinkle remaining cheese over the top.
  • Bake at 350°F for 45 minutes.
  • This dish can be prepared ahead and refrigerated until ready for the oven. Quantities can be adjusted with potatoes and cheese as desired.

    This is super simple, and just as tasty as a laborious traditional potato bake gratin recipe. I love that it can be made up until the point of putting it in the oven, meaning you can have dinner prepped earlier in the day for those busy afternoons. I made it with feta and spinach stuffed chicken breast and prepped both things in the morning, then I only had to preheat the oven and cook for 40 minutes while we relaxed and waited for our dinner.

    This was such a hit. The onions get nice and sweet, the potatoes are lovely and soft, and all of it is so creamy, cheesy, and delicious. I did learn something important, though. Even if you're using four instead of six, don't use big baking potatoes. The slices end up way too big! I'll use smaller ones next time, and I think it will be much prettier to look at.

I am 52 years young and have two grown sons who love my cooking. This is probably because they have left home to pursue further education and careers, hence I am now more appreciated perhaps. I have finally got the time to experiment with different recipes at my leisure rather than juggling the daily grind of working shiftwork and nightly food preparation. My partner also loves cooking and we often spend evenings cooking new things together.
