- 1 prepared graham cracker pie crust
- 3 ounces lemon gelatin
- 2 teaspoons lemon zest
- 2 tablespoons lemon juice
- 8 ounces cream cheese
- 8 ounces cottage cheese
- 2⁄3 cup boiling water
- 8 ounces Cool Whip
- 2 cups fresh diced strawberries
directions
- In a blender, blend boiling water with lemon jello until dissolved.
- With blender still running, add lemon zest, lemon juice, cream cheese, and cottage cheese. Blend until smooth.
- Fold in the Cool Whip until fully mixed.
- Put a few inches of cheese mix in the bottom of the graham cracker crust.
- Pour a layer of diced strawberries on top, then another layer of cheese mixture.
- Let pie set up in refrigerator for a few hours.
- Serve with a scoop of diced strawberries on the top.
