Double Strawberry Lemon Cheesecake

ingredients

• 1 prepared graham cracker pie crust
• 3 ounces lemon gelatin
• 2 teaspoons lemon zest
• 2 tablespoons lemon juice
• 8 ounces cream cheese
• 8 ounces cottage cheese
• 2⁄3 cup boiling water
• 8 ounces Cool Whip
• 2 cups fresh diced strawberries

directions

1. In a blender, blend boiling water with lemon jello until dissolved.
2. With blender still running, add lemon zest, lemon juice, cream cheese, and cottage cheese. Blend until smooth.
3. Fold in the Cool Whip until fully mixed.
4. Put a few inches of cheese mix in the bottom of the graham cracker crust.
5. Pour a layer of diced strawberries on top, then another layer of cheese mixture.
6. Let pie set up in refrigerator for a few hours.
7. Serve with a scoop of diced strawberries on the top.
