Deviled Eggs With Curry

  • Cut hard-boiled eggs lengthwise in half.
  • Scoop the yolks into medium bowl and mash with fork.
  • Add mayo, green onion and curry powder and mix well.
  • Season mixture to taste with salt and pepper.
  • You can either spoon the mix into the egg halves or like I did, pipe them with a star tip for a very nice presentation.
  • Can be made 8 hours ahead, kept covered and refrigerated.

  1. Lisa, these were absolutely the best tasting deviled eggs. I served them with our Easter dinner, and they were a hit. I substituted salad dressing for the mayonnaise, (1/3 cup to be exact) because I prefer deviled eggs with salad dressing rather than mayonnaise (a taste preference ). THANK YOU FOR THE RECIPE!

  4. These were great! I used my mini prep to mix everything together. I did add a little rice vinegar for some zip since I didn't have onions and a dap of texas pete for no reason other than I could. I am sure they would be just wonderful the way they are posted too.

I used a little bit of yellow onion instead of scallion; otherwise I followed to the letter. Thanks for such a nice introduction to deviled eggs!
