Danish Red Cabbage

ingredients
- 1 medium red cabbage
- 1⁄2 cup vinegar
- 1⁄4 cup water
- 1⁄4 cup sugar
- 1⁄2 teaspoon salt
- 1⁄2 cup red currant jelly
directions
- Slice red cabbage thinly.
- Add remaining ingredients except jelly.
- Cover and boil 1 hour.
- The lasts 15 minutes add the jelly.
- Can be eaten hot or cold.
- It is also good on a sandwich with roast beef or roast pork.

I made this for a danish friend of mine. He didn't rave quite as much as my husband lol! But it was fabulous. My only complaint was that it made a pretty decent mess in the pan. Maybe I was too hot? Regardless, will make again and next time pay better attention to the temperature. My 3 year old ate this. Imagine that! Thanks DotM.
