ingredients
- 2 tablespoons butter
- 1⁄2 tablespoon curry powder
- 1 (13 1/2 ounce) can coconut milk
- 2 tablespoons olive oil
- 1 cup sliced onion
- 5 garlic cloves, minced
- 4 chicken thighs, boneless, skinless, cubed
- 1 potato, diced small
- 1⁄4 teaspoon salt (to taste)
directions
- Prep ingredients (cube potatoes, slice onions, chop garlic and cube chicken).
- In a large skillet, melt butter over low heat . Once melted, add curry powder and swirl until well blended.
- Add in the can of coconut milk and mix thoroughly. Keep warm.
- In a separate skillet, sauté the garlic and onions in olive oil.
- Once the onions are translucent, add chicken.
- Once the meat is cooked very lightly, add potatoes and curry mix to the pan.
- Cover and simmer about 30 minutes.
- Serve over rice.
