- 12 ounces spinach, cooked and well-drained
- 1 onion, diced
- 2 garlic cloves, minced
- 200 g light ricotta cheese
- 1⁄3 cup low-fat plain yogurt
- 2 eggs
- 2 teaspoons dill weed
- 2 teaspoons lemon juice
- salt and pepper
directions
- Sauté onions and garlic until tender.
- Meanwhile, combine ricotta, yogurt, and whisked eggs. Add seasonings, lemon juice, spinach, and onion/garlic mix.
- Transfer to greased deep-dish pie plate.
- Bake in 375F oven for 40-45 minutes, until set.
