- 4 -6 boneless skinless chicken breasts
- 2 large onions, coarsely chopped
- 2 garlic cloves, minced
- 2 tablespoons butter
- 2 (14 ounce) cans tomatoes with juice, crushed
- 1 teaspoon cinnamon
- 2 tablespoons curry powder
- 1⁄2 cup raisins
directions
- Brown chicken in butter; add garlic and onions and saute about 2 minutes.
- Transfer to slow cooker.
- Combine remaining ingredients and add to cooker.
- Cook low for 6-8 hours.
- Serve over rice.

Crocked this for DH & DS and got a thumbs up from all. I changed a couple of things such as using red curry paste instead of the curry powder and added a can of lowfat coconut milk and was very India flavored. Next time I will add regular coconut cream and use cilantro. Served over brown rice, next time I will use a nice jasmine rice. THANK YOU MISS ANNIE! This one is a keeper! Sorry I forgot to snap a picture, will do so next time.
