    I have found the cream chesse Icing of my dreams. Bert this is so very good and easy to mix. Easy to spead on the cake and all. I used it on Pineapple Cake. I will keep this one .

    I used this recipe for icing a Pineapple Dream Cake. In order to get it to the right consistency, I had to add a LOT more than 2 1/2 cups of confectioners sugar. If I'd used icing sugar, perhaps I wouldn't have needed that much sugar.

    This icing never stiffened up for me but I don't want to rate it because it might have been my fault. I used Neufchatel cheese instead of full fat cream cheese so maybe that made a difference. I even put it in the fridge overnight hoping it would stiffen up but it didn't. Needless to say, the carrot cupcakes we frosted were pretty messy but still yummy!
