Chocolate Covered Cherries - Simple Style

"These Cherries are great. They are made with Marshmallow creme instead of condensed milk. They are very easy to make - especially if you've never tried to make them before! My mother in law passed the recipe on to me and they are very rich - but very good! A perfect valentines day treat."

  • Cream butter and beat in marshmallow creme and salt.
  • Add powdered sugar.
  • Turn and kneed until mixed thoroughly.
  • Refrigerate the mixture for 2 hours .
  • De-stem, drain and dry the cherries.
  • Cover each individual cherry with some of the marshmallow mixture until completely covered and freeze solid. (usually about an hour).
  • Melt chocolate in double broiler. (you can also use your microwave on a very low power setting, just be careful not to burn the chocolate).
  • Dip marshmallow covered cherries in chocolate and place an a wax paper-lined cookie sheet.
  • Refrigerate for 2 hours and serve.

I love to cook. I used to hate it. That was before I became a stay - home mom. I made foods for me and my husband as newlyweds and I know he choked some of it down with a smile. He still jokes to this day about when I made spaghetti and I didn't heat the sauce up. I just poured it over the hot noodles thinking they would warm the sauce - not so! Cold dinner - ick! Well I've gotten a lot better and my ultimate goal is to be the best cook in my family. I like to try new things and especially try to find recipes for foods that most people do not like. My rating system 1 star = will not eat again, will not make again. 2 stars = will not make again, but would eat it, if someone else made it for me 3 stars = Good, not the best I've ever had, but good flavor. 4 stars = Very good. I will make it again on occassion and would even recommend to others. 5 stars = Excellent. The best of it's kind that I've tasted, easy to make, others liked it too. Will make it again and will recommend to others.
