Chili Meatloaf

  • In a large bowl, beat egg with a fork.
  • Add bread crumbs, salt and pepper.
  • Gently mix in ground beef.
  • Set aside.
  • In a large frying pan, heat oil on medium-high heat.
  • Add onion; cook for 5 minutes or until softened.
  • Add sweet pepper and chili powder.
  • Cook for another 4 minutes.
  • Let cool slightly and then add to beef mixture.
  • Add kidney beans and salsa.
  • Pack into an 8 by 4 inch loaf pan.
  • Bake in preheated 350F (180C) degree oven for 60-75 minutes.
  • Drain off fat.
  • Sprinkle cheddar cheese on top of meatloaf and return to oven for 5-7 minutes or until cheese is bubbly.

  2. WOW, meat loaf packed with flavour!! Very good M&Mers!! This is one of the better meat loaves we've tried and even better the next day! Made the meatloaf just as stated, just added one thing, 2 smashed cloves of garlic. Used my own homemade salsa inside and added some on top before I added the cheese. I'm making it again tonight, after dark when it's cooler and will have it cold in the fridge for a couple of cool suppers on these hot days. Thanks for sharing a keeper!!

  4. excellent! moist and very flavorful. all of us loved it. i used 3 pounds of lean ground beef in one loaf pan but did not double the rest of the ingredients. it turned out very nice, but next time i will double all the ingredients.

I'm a small animal veterinary technician working full time. In my spare (?) time I love to bake and cook. I have about 80 different cookbooks and I guess my favorite ones are those that involve CHOCOLATE!! <br> <br>My biggest 'pet' peeve is people who treat their dogs and cats like disposable products...look after the health and well-being of your pets, PLEASE! They depend on you! ('Nuff said!). <br> <br>June 2003 Update: I now work part-time as a vet tech and part-time as an ER ward clerk at a local hospital. After being a technician for 20 years, the emotional stress was getting too hard to handle. Putting an older pet to sleep after I'd watched them grow up over the years was something I could no longer do. I decided to look for a new job while I was still 40-something rather than wait 4 years when I was 50-something! Working with animals is in my blood however, so I could not give it up entirely.
