ingredients
- 2 -3 boneless skinless chicken breasts
- 1⁄2 tablespoon oil
- 1⁄4 - 1⁄2 white onion, diced
- 1 (15 ounce) can black beans
- 1 (15 ounce) can diced tomatoes with green chilies
- 1 taco seasoning mix
- 1 cup mexican cheese
- 1⁄2 cup water
- 4 flour tortillas
- sour cream
directions
- cook chicken in oil until almost done (cut into cubes or strips).
- add diced onion and cook all until chicken is done.
- add beans, tomatoes, seasoning, and water. Heat to boiling.
- simmer for 10-20 minutes, stirring occasionally.
- spoon mixture into the tortilla shells, add cheese, and roll into burritos.
- place under broiler for 2-5 minutes (until they appear crunchy).
- top with sour cream and serve.

Had company for lunch the other day & made these burritos to go along with a salad & soup! Made the recipe as given, though another time I might just use some of the baked & diced chicken breast that I have in the freezer! I'm not big on the sour cream but had it on the table for the other 3 to enjoy! These are tasty burritos that are easy to make & I'll be keeping the recipe around! Thanks for sharing it!
