Cherry Nut Bread

ingredients
- 2 cups flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄2 cup butter, softened
- 3⁄4 cup sugar
- 2 eggs
- 1 cup buttermilk
- 1 teaspoon vanilla
- 1 cup chopped walnuts
- 3⁄4 cup maraschino cherry, drained and chopped
directions
- Sift flour, soda and salt together.
- In lg mixing bowl, cream butter and sugar until fluffy.
- Add eggs, beat well.
- Alternately add flour and buttermilk, blending well.
- Add vanilla, nuts, and cherries.
- Pour batter into a greased and floured 9inch loaf pan.
- Bake at 350* for 60-70 minutes, until pick comes out clean.
- Cool in pan for 10 minutes; remove and cool on wire rack.

I thought this was a great cherry nut bread. The texture was just perfect. I did change a few things though for a lower fat bread (but just as good): instead of buttermilk I used 1 cup skim milk and 1 tablespoon of vinegar (sit for 10 minutes). I also used 3 egg whites instead of 2 eggs. I probably added 3/4 c walnuts instead which was plenty and in the future I would add more cherries. I am not even super into cherries but I still thought there weren't enough. The chopping of the cherries is key because when I halved them they were still too heavy and sunk to the bottom of the bread. Enjoy!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
