Carrot Rolls

- 8 cups sliced carrots
- 3 cups fresh breadcrumbs
- 2 cups cheddar cheese, shredded
- salt, black pepper, and ground nutmeg to taste
- 2 egg whites
- 1 cup corn flakes, crushed
- fresh parsley sprig
directions
- Preheat oven to 350°F.
- Steam carrots for about 10 minutes or until soft. Drain and mash well. Add breadcrumbs, cheese and seasonings.
- Beat egg whites until stiff; fold into carrot mixrture.
- Shape mixture into 24 rolls that are each about 2-inches long. Roll in crushed cornflakes. Place on a nonstick or lightly greased baking sheet. bake in preheated oven for about 20 minutes, or until browned.
- Makes 24 rolls ro 12 servings.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
