- 1 garlic clove
- 20 ml red wine vinegar
- 10 ml lemon juice
- 1⁄8 teaspoon pepper
- 5 ml Worcestershire sauce
- 90 ml olive oil
- 2 ml salt
- 2 ml dry mustard or 5 ml Dijon mustard
- 1⁄4 head romaine lettuce
- 125 ml croutons
- 25 ml parmesan cheese
- 1⁄2 green onion, chopped
directions
- Crush garlic with a fork against the sides of the salad bowl.
- Remove from the bowl.
- Prepare Romaine lettice, tearing into bite sized pieces. Assemble the, onions, crutons and Parmesan.
- Pour the vinegar, lemon juice, Worcestershire, mustard and seasons into the salad bowl.
- Pour the oil into the mixture, in a slow stream, whisking constantly.
- Add the lettuce and onions to the dressing, topssing gently just until the lettuce is coated. Sprinkle over the cheese and croutons. Serve at once.
