- 3 eggs
- 2⁄3 cup vegetable oil
- 1 1⁄2 cups sugar
- 2 teaspoons vanilla
- 2 1⁄2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1⁄2 teaspoon baking powder
- 2 cups zucchini, shredded and packed
- 1 cup butterscotch chips
- 1⁄2 cup brown sugar
directions
- Preheat oven to 350. Grease a 15x10x1 sheet pan.
- Beat together eggs, sugar, oil and vanilla.
- Beat in soda, salt and powder.
- Mix in flour until well mixed.
- Stir in zucchini.
- Pour into pan.
- Mix together brown sugar and butterscotch chips and sprinkle over batter in pan.
- Bake for 30 minutes or until a toothpick poked in comes out clean.
