Breakfast Quiche

ingredients
- 1 9 inch pie shell, unbaked
- 1⁄2 lb sausage, cooked and drained
- 2 cups cheddar cheese, grated
- 2 cups potatoes, raw,grated,rinsed in cold water and squeezed dry
- 1 green onion, minced
- 5 eggs, well beaten
directions
- Preheat oven to 425F.
- Spread sausage evenly in bottom of prepared pie shell.
- Sprinkle cheese, potatoes and onion over sausage.
- Pour eggs over all.
- Bake for 5 minutes, reduce heat to 375F and bake 45-55 minutes, until lightly browned and well set.

Very nice recipe. I made this for visiting family that had never had a Quiche and they loved it. I did have to add about 1/4 cup heavy cream and 2 additional eggs to fill the dish. Also used bacon instead of sausage as personal preferance and fresh asparagus from the garden - and it turned out great. Thanks Evelyn for a recipe that was quick, easy, very tasty and impressive for my family.

Excellent quiche. I had some homemade pie dough in the freezer so I used that for the pie shell and substituted bacon for the sausage at DH request. Wonderful blend of ingredients. I might add a little sour cream or some half and half to the egg mixture next time because it was just a tad dry for us. Thanks

OK, here goes. I live in Athens, Greece. I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages!
I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure.
So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call.
What did I do wrong?
Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths.
I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time.
