Using Italian breadcrumbs is hardly a tweak... There are many recipes that use them instead of making your own breading. Cook until the chops are 155 deg. Celcius! You need to get a better thermometer or cut the temp back a tad. That's a mere 311 deg. Fahrenheit... My cookbook says to cook fresh pork to 150 deg. Fahrenheit. It would however be great "tweak" if you had a taste for blackened shoe leather.
