ingredients
- 2 cups blueberries
- 1 banana, mashed
- 3⁄4 cup sugar
- 3⁄4 cup frozen orange juice concentrate, thawed
- 2 cups nonfat yogurt
- 1 teaspoon vanilla extract
directions
- Combine all ingredients in a blender or food processor. Blend well. Pour into an ice cream maker and freeze according to manufacturer's directions.
- Defrost slightly before serving.

My pick for PAC Fall 2007. I don't have an ice cream machine but I just bought a Jack LaLanne Health Mixer (similar to Vita Mix) and it claims it can make ice cream. This was my first recipe to try out the machine. I've made it three times (halving it) and it's really good. The orange juice concentrate adds a lot of flavor. My machine did a good job, resulting in a soft sherbet texture. Thanks Feingold Mommy, for posting. Roxygirl

I am a homeschooling mother of 8. We have chickens, goats and emus, as well as a year round veggie garden.

My ultimate cake right now is the german chocolate carob cake. My goal in life was to find the perfect sticky toffee pudding recipe. I have now found it in Carol's Sticky Toffee Pudding. This is the most amazing dessert (next to my carob cake) I've ever tasted.
