- 1 whole egg
- 4 whole egg whites
- 1⁄2 ounce cheddar cheese
- 1⁄2 cup mushroom
- 1⁄4 cup bell pepper
- 1⁄4 cup roma tomato
- 1 ounce bacon
- 1 tablespoon milk
- cajun seasoning
directions
- Clean Mushrooms with a dry paper towel.
- Slice Mushrooms vertically.
- Sautee Mushrooms in a pan on medium heat.
- Slide cooked mushrooms to the corner of the pan.
- Mix eggs in a cup, add a bit of milk depending on preferred texture.
- Pour egg batter onto pan, turn down a small notch.
- Keep eggs moving in pan, add in Cheese, Pepper and Bacon, then mix mushrooms back in once nearly cooked.
- Serve on plate and add cajun seasoning to taste.
