  • Clean Mushrooms with a dry paper towel.
  • Slice Mushrooms vertically.
  • Sautee Mushrooms in a pan on medium heat.
  • Slide cooked mushrooms to the corner of the pan.
  • Mix eggs in a cup, add a bit of milk depending on preferred texture.
  • Pour egg batter onto pan, turn down a small notch.
  • Keep eggs moving in pan, add in Cheese, Pepper and Bacon, then mix mushrooms back in once nearly cooked.
  • Serve on plate and add cajun seasoning to taste.
