Bacon and Brown Sugar Infused Tilapia

"My husband says this dish reminds of him of bacon wrapped scallops. It has that savory, yet slightly sweet taste. Quick and easy to make. I initially planned to wrap the filets with the bacon, but the bacon cooked up to fast and so I just finished it in the pan with the filets."

  1. Simple and delicious. Changes I made were solely in the cooking method. I diced the bacon and sauteed it in the pan. Poured off the fat, added the butter and proceeded from there. Made for New Kids on the Block Tag game. :)
  2. This was very very tasty! I followed the instructions only making two batches of this recipe and like Lori Mama I sauteed the bacon first, drained the fat and added butter and continued with the recipe. Definately a keeper. Thank you for posting. Made for Spring PAC 2013.
  3. Very good and very fast. Kid tested and approved.
  4. LOVE THIS!!! Always a winner at my house and super simple to make for something that tastes so delicious.
  5. My fiance and I love this recipe. Although, we are going to tweek the preparation method the next time around, and yes we are absolutely sure there will be a next time. Instead of cooking the bacon half way in the microwave we will cook it halfway in the pan that the tilapia will be pan seared in to infuse the fish with the bacon oil flavor and sprinkle the fish with a little salt, pepper, and brown sugar as it is cooking. Then we will make a brown sugar, bacon, butter glaze in a separate pan and drizzle it over the tilapia at the end. Overall this was such a tasty dish, thank you for sharing it.
