  • Mix all the ingredients together well.
  • Bake in lightly greased jelly roll pan at 350 degrees for 20 minutes.
  • Frost with cream cheese frosting or dust with powdered sugar.

  1. Ok i had no idea how much the batter turned out to be until I started adding ingredients n i knew it was going to be a lot . well a lot for my 8×8 glass Pyrex i was planning (and am still using to bake it.) my question is, how long should I bake it now that it will be so deep a dish instead of a big spread out One? Longer than 20 mins in sure, right?

  2. Excellent cake, very moist. I love the spice flavor of this cake and the wonderful cream cheese frosting. Just a couple of minor changes on my part. I cut the oil down to 1 cup, and had to sub a jar of pears for the peaches, no peach baby food at either of my stores. I'm sure that was minor. Also I'm not big on cooking a cake in a jelly roll pan so I cooked in my regular sheet cake pan. This would be good in a bundt pan, too. I cooked for a total of about 45 minutes. Very good, would make again.

Thanks for this great and easy recipe! some changes; i use 3 jars of carrots, luv the flavor. i throw in a few Tbsp of coconut flakes. and about 1 tsp imitation butter Xtract. and im very very generous with the cinnamon. i grease 2 9 inch round alluminum pans and bake for about 45 mins. then i make a two layer cake and have frosting in the middle and all around. it looks a little more "grown up" and is still sinfully simple! Best of luck!!!!
     
  4. Excellent cake! I made this for my son's first birthday party and it was a hit with the other moms and their babies. The cake tasted a lot like a traditional carrot cake.
