Almond Crusted Cherry Cream Pie

- 1 pie crust mix (or make your own)
- 1⁄2 cup slivered almonds (finely chopped or ground)
- 1 (15 ounce) can sweetened condensed milk
- 1⁄3 cup lemon juice
- 1 teaspoon vanilla
- 1⁄2 teaspoon almond extract
- 1⁄2 cup heavy whipping cream, whipped
- 1 (21 ounce) can cherry pie filling
directions
- Mix pie crust as directed, but add chopped almonds with water.
- Prick only the sides of the pie crust and bake as directed.
- Cool.
- Combine condensed milk, lemon juice, vanilla, and almond extract.
- Fold in whipped cream and spoon into cooled pie shell.
- Spread cherry pie filling over cream filling.
- Chill.

I've made a very similar pie for over 50 years. Found the recipe in the newspaper magazine when I was a teenager and it's been a family favorite ever since. The recipe I used is slightly different since you used canned cherries, not cherry pie filling. It's definitely A favorite at Christmas and Thanksgiving

I'm 20, and love, love, LOVE to bake and cook. If I weren't so afraid of no longer enjoying it if it were my job, I'd become a chef or open a bakery or something. I'm going to college (taking this year off because I got married) and majoring in biochemistry and forensics, so I can become a CSI. I haven't decided what I'm minoring in, but probably psychology and one or more languages.
You may notice that all of the recipes I've reviewed have 4 or 5 stars. That's because I generally won't rate things that I or my family didn't like or didn't turn out well unless I can think of a way to improve it or did something to make it better (in my opinion).
I just got married and I LOVE it!
To me there's almost nothing more satisfying than seeing people eating and enjoying what I've made for them!^_^
