- 2 cups flour
- 1 1⁄3 cups sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
- 3⁄4 cup vegetable shortening
- 1 1⁄4 cups milk
- 2 teaspoons vanilla
- 3 egg whites
directions
- Heat oven to 350F degrees.
- Grease and flour 9x13 pan.
- Combine dry ingredients in mixing bowl.
- Beat in shortening.
- Add milk and vanilla.
- Beat for 2 minutes.
- Beat in egg whites, beat until very smooth.
- Bake for 35 minutes, or until done.

I used 2 9 inch pans, greased them and baked for 25 minutes. I divided the batter into 7 bowls and added rainbow colored food coloring. You know - ROY G BIV. Anyway, after adding the colors I split the bowls between both pans in order- 1st the red, then orange, yellow, etc. keeping each new color inside the other. It made a circular rainbow cake that was delicious. I'm a little OCD, but you can put whatever color pattern you want. It was really good!
