- 2 1⁄2 lbs beef (I use a cheep cut and chop it up in the food proccesor, smaller than stew meat larger than ground be)
- 2 (14 ounce) cans pinto beans (any kind of bean will do)
- 2 (14 ounce) cans tomato sauce
- 1 (20 ounce) can petite tomatoes
- 2 bell peppers, roasted
- 6 anehim bell peppers, roasted
- 6 dried ancho chilies, seeded
- 2 medium onions
- 2 -4 garlic cloves, minced
- 1 tablespoon mexican oregano
- 1 -2 tablespoon paprika
- 1 tablespoon chili powder
- 2 tablespoons unsweetened cocoa powder
- salt & pepper
directions
- Brown ground up meat, onions and garlic.
- Chop and seed all peppers, add to meat.
- Add tomatoes, tomato sauce, drained beans,
- spices and cocoa powder.
- Simmer chili till all flavors combined and ancho peppers soften, at least 1hr. Or put it in your crockpot.
