Zucchini Slaw

"A tasty salad to use up all those zucchini in your garden."

• Serves: 4

ingredients

• 2 zucchini, sliced thin
• 1⁄4 cup onion, diced small
• 1 cup shredded carrot
• 3 tablespoons mayonnaise
• salt and pepper
• 1⁄2 teaspoon sugar
• 1 tablespoon cider vinegar

directions

1. Whisk together Mayo, sugar, cider vinegar and salt and pepper. Toss together the zucchini, onion and carrot. Fold together the dressing and the veggies.
