- 1⁄2 cup butter
- 4 eggs
- 1 1⁄2 cups sugar
- 1 1⁄2 cups brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 1⁄2 teaspoons cinnamon
- 1 teaspoon salt
- 1 1⁄2 cups canola oil
- 3 cups flour
- 3 cups grated zucchini
- 1 cup chopped nuts
directions
- preheat oven to 350.
- Prepare pans with cooking spray and flour or parchment.
- Cream butter and sugars.
- Add eggs one at a time.
- While mixing, add baking powder, baking soda, salt and cinnamon.
- Add canola oil, slowly.
- Add flour, zucchini and nuts.
- Bake in a 350 degree oven for 35 minutes for cupcakes, about 75 minutes for 13 x 9 cake .
- Cool before frosting or sprinkling with confectioners sugar.
