This is a wonderful recipe I adapted from Insider's report magazine. It is great to serve at Christmas or anytime because of the colour. Wonderful with Brie in pastry.
- 1 large tomatoes, seeded and diced
- 1 ripe mango, diced
- 1⁄3 cup diced red onion
- 1⁄4 cup chopped Italian parsley
- 2 tablespoons seasoned rice vinegar
- Stir together and refrigerate 2 hours.
- Can be made day ahead.
